Kultured Kraut (Sauerkraut)
Kultured Kraut (Sauerkraut)
Is this the first time you are fermenting? Then start with this recipe as it will help you gain confidence in this cooking method.
Ingrediënten
- 1 Cabbage ~ 1 kg
- 22 g Salt
- 1 sachet Kultured starter culture
Instructies
- Dissolve the starter in 100 ml lukewarm water.
- Remove the outer leaves from the cabbage.
- Cut the cabbage in pieces of 1 – 2 cm. Do you prefer to have smaller pieces? Then use a grater!
- Collect the cabbage in a bowl and add salt.
- Time to get dirty: knead the salt into the cabbage so that the cabbage starts to release moisture. Try to do this for at least 5 to 10 minutes.
- Add the starter culture and knead again for a minute.
- Add the cabbage to your Kultured jar and press it down.
- Add the fermentation weight and press it down as well. Make sure your jar is filled to the top leaving 2 – 2.5 cm of air and that all veggies are submerged completely submerged.
- Store the Kultured Kraut in a safe space and let it ferment for 2-5 days on a room temperature of 20 to 25℃. Then store in the fridge.

You can easily swap white cabbage for red cabbage for another taste experience
Kultured Kimchi
Kultured Kimchi (English)
Kimchi is Korean fermented deliciousness. It is deeply rooted in their culture and you can find it everywhere in the country. It is so deeply rooted that a Korean research institute developed a special space-proof kimchi that can be sent along with their astronauts on space missions. That seems like a food you have to try right?Admittedly, real Koreans will probably not label our kimchi as proper kimchi, but we believe it is a real tasty version that you can make with ingredients that you can easily find in a supermarket. That is already a great start, no?
Equipment
- Small blender (If you do not have one, just use your knife!)
Ingrediënten
- 1 Chinese cabbage
- 1 Spanish radish
- 2 carrots
- 1 bundle scallions
- 1 piece ginger
- 2 cloves garlic
- 2 chili peppers
- 22 g salt
- 1 sachet Kultured starter culture
Instructies
- Dissolve the starter culture in 100 ml luke warm water
- Cut the Chinese cabbage in small pieces of 1-2 cm and transfer them to a large bowl.
- Add all the salt and start kneading away so that the cabbage releases most of it moisture.
- Grate the Spanish radish and add to the bowl.
- Grate the carrots and add to the bowl.
- Cut the scallions and add to the bowl.
- Now we will start making a chili paste. For this we will use a small blender. If you do not have one available, do not panic, you can just cut everything very finely instead.Add the garlic cloves to the blender.
- Peel the ginger and add to the blender.
- Add the chili peppers to the blender and blend away! Add the chili paste to the bowl
- Add the starter culture.
- Glove up to spare you some tears and start kneading and mixing the veggies!
- Transfer the mixture to your (Kultured) fermentation jar.
- Add your fermentation weight to make sure that all veggies are submerged.
- Store on a safe place and let it ferment for 2-5 days at 20-25°C
